The Roussillon is still one of the most underrated spots in France, of put together with the far wider expanse of the “Languedoc-Roussillon”. Made very naturally with a long, slow fermentation and no fining, the Cami del Drac (“the path of the dragon”) is planted on higher altitude slopes and picked far later than most other varieties. We immediately loved the style, which is aromatic and floral, yet with a delicate herbal twist. A great white to match with richer, Winter dishes.
