Benito Santos was a central figure in the history of Albariño in Rias Baixas, the cooler-climate wine region of North-Western Spain. In the 1930s he cultivated the vines to make wine for his bar, and his philosophy of respect in the vineyard and minimal intervention in the winery continues today.
