Winemaker Bernard came across this old vineyard in the Southern Coastal area of Stellenbosch, beneath Helderberg Mountain. Away from all the tourism that Stellenbosch is known for, this is made in a traditional way, with handpicked grapes, natural ferment (i.e. no added yeast) and then spends 9 months in old oak barrels. “Sout” translates to “salt” and this wine has a zesty, apply, saline, nutty, almost waxy texture. The richness reminds me of some of the great Chenin Blancs of the Loire Valley in France. Superb.
